Canadian Guest Chef Dinner | Rich Francis, Seventh Fire Hospitality Group

Rich Francis (SCS Class of 2008) is our Canadian Guest Chef! Experience an exquisite 4 course dinner executed and served by our Level 2 student chefs.
MENU: Rich Francis, Seventh Fire Hospitality Group
-Sockeye Salmon cured with the 4 medicines (cedar, sweetgrass, sage, and tobacco), salmon ceviche, salmon chicharron
-Three Sister Soup and Salad, with Pickled Blueberries, Pheasant Heart Tempura, Sweetgrass Vinaigrette
-Braised Elk Shin with Bone Marrow Brulée, Marinated Mushroom Escabeche, Roasted Concord Grapes, Espresso Balsamic Reduction & Elk Jus
-Grilled then Riesling-poached Pears with Brown Butter Sweetgrass Vanilla Bean Ice Cream

Dinner Labs for the public are an essential part of our Students’ experiential training, enabling them to gain real-world experience in a Professional Kitchen and in various Front of House positions.
Strict health and safety measures have been implemented to keep guests safe and comfortable as per current Public Health regulations. We’ve reduced our maximum dine-in capacity to ensure guests are seated at appropriately distanced tables in our spacious and modern Dining Room.
Please note that all guests must wear a mask in our facility whenever they are not seated at their assigned table. Maximum 4 guests seated together.
